Pre measured ingredients included in the kit: ground thyme, salt, sugar, allspice, cinnamon,ground cloves. ginger, ground black pepper, nutmeg, vinegar, soy sauce, dried jerk rub.
Fresh ingredients you will need: chicken, shrimp, garlic, scotch or habanero peppers, orange juice, a lime, and olive oil. (Don't forget the red stripe while you are at the store.)

I won the destination passport at a fundraising auction. This weekend I finally made the Jamaician Jerk Chicken and I must say this is the most authentic recipe since my first taste of jerk chicken at a roadside stand in Negril. I've made pretty good jerk chicken from recipes on Epicurious and this one was much more authentic. It's excellent and would highly recommend.
