Mixed Vegetables with Sweet Potato Noodles
A dish literally made for a king. Japchae, pronounced ‘chap chay’, was created almost 400 years ago by a liege attempting to impress his king’s palate. The dish which combined sliced vegetables stir fried in sesame oil with sweet potato starch noodles seasoned with soy and sugar did more than impress. The liege was immediately promoted to the equivalent of Secretary of Treasury as a reward for his culinary genius. Today Japchae usually includes both meat (usually beef or chicken)and vegetables. Vegetarians however can make the dish using seasonal vegetables such as daikon radish, or squash as well as firm tofu.
Serves 6 – 8 adults (at least!)
Kit includes: Sweet potato noodles, soy sauce, dark sesame oil, black pepper, dried shitake and wood ear mushrooms, salt, sugar, Ziploc bag, shopping list for fresh items, preparation instructions, table setting suggestions, knife skills guide and ‘Tea & Trivia’ to enjoy after your meal.
Fresh ingredients you will need: carrots, green onions, yellow onion, beef, garlic, and green bell pepper.
